Jack`s Carrot cake

 

 

 
 

All time favourite and best seller in our cafe and here is the recipe!

Ingredients

  • A

    100g whole wheat bread flour

    100g unbleached white flour

    1 tbsp cinnamon powder

    1 tsp nutmeg powder

    1/2 tbsp baking powder

  • B

    90g butter

    90g sweetener (honey, agave, maple syrup etc)

    50g sugar

  • C

    200g carrot (grated)

    50g coconut

  • D

    125g raisins

    1/2 tsp orange peel

 

Method

Soak the raisins and orange peel in a small amount of hot water until soft.

 

Sift A into a large bowl.

 

Warm the butter and cream together with the sweetener and sugar.

 

Mix B into A. Drain D and add to mix. Finally fold in C.

 

Bake at 190ºC for 20 minutes, then reduce the heat to 150ºC and continue to bake for a further 40-50 minutes.
