Mustang Beans

This is a great recipe to get you started using these lovely beans:
Ingredients:
- 200g mustang beans
- 1 medium onion (diced)
- 3-4 chives/asatsuki
- 2tsp oil
- 2 pinches cumin powder
- 2 pinches turmeric
- 1 tsp garlic paste
- 1 tsp ginger paste
Wash the beans, then leave to soak in clean water overnight. The following day bring the beans to the boil and simmer until soft; about 1 hr. Drain.
Heat the oil in a pan, then add the onions and cook until transparent. Add everthing else, excluding the beans, garlic and ginger paste. Heat through. Add the beans, ginger and garlic pastes and about 150ml water. Mix well.
Place everything in a mixer and blend to your preferred consistency. Alternatively you can mash by hand. You can all salt and/or tomato paste for a stronger flavour.
