Alishan Cafe’s Recipe Book Translation p32 : Veggie Mabo
You will need:
- 1 block silken tofu
- 5g garlic (finely diced)
- 10g fresh ginger (finely diced)
- 10g onion (finely diced)
- 30g touchi (finely sliced)
- 30g TSP
- 3 Tbsp oil
Flavouring:
- 5g miso
- 50g miso chili sauce
- 2 Tbsp sake
- 2 tsp soy sauce
- 300 ml water
- pinch pepper
You will also need:
- 7g kuzu
- 40 ml water
- sesame oil
- chili oil (ra-yu)
- a little finely sliced spring onion for topping
How to Make:
- Cut the tofu into 1.5 cm cubes
- Heat the oil in a frying pan and add the garlic, ginger, onion and touchi. Heat until fragrant.
- Add the TSP and ensure it is well coated with oil.
- Add the flavouring, stir well, then add the tofu.
- Switch off the heat, mix the kuzu and water and add to the tofu mix. Switch the heat back to low and stir until the sauce has thickened.
- Finally add the sesame and ra oil to taste. Top with spring onion.
