Alishan Cafe’s Recipe Book Translation p34 : Rice Salad
Ingredients:
600g cooked rice
- 80g onion (diced)
- 25g carrot (diced)
- 1/2 green pepper (diced)
- 30g cucumber (diced)
- 40g sweetcorn (kernels)
- 30g nuts (lightly roasted and finely chopped)
Dressing:
- 3g crushed garlic
- 1tsp fresh basil (finely chopped) or basil paste
- 10g brown mustard
- 2tsp maple syrup
- 1/2 tsp salt
- 2tsp lemon juice
- 40ml white wine vinegar
- 2tsp soy sauce
- 1/3 tsp black pepper
- 2 Tbsp olive oil
For the side salad you will need:
- lettace
- carrot (sliced)
- mini tomatoes
- okura
- white sesame
How to Make:
- Use a blender to combine the dressing ingredients. If you don’t have one tip everything into a large bottle, screw the lid shut then shake until everything is well combined.
- Mix together the rice, diced vegetables and the dressing until all is evenly coated.
- Arrange the salad on a place, then place the rice salad on top and sprinkle with the sesame seeds.
