Red Lentil Soup
Lentils have an unusually thin stem and
grow to about 35-45 cm tall. They flower from the bottom of
the stem, producing pods of around 1.2cm long containing 1-2
lentils each (see picture 1). Due to their thin stems the lentil plant does
not grow straight like corn or wheat making them difficult to harvest. A special combine has to cut very close to the soil in order to harvest the lentils.

Red Lentil Soup
200g red lentils (rinse well before use)
1 onion, diced
1 carrot, diced
1 stick celery, diced
2 cloves garlic, crushed
1.5 cubes bouillon
50-100g kamut (optional)
2 bay leaves
1 tbsp oregano
1 tbsp thyme
1 tsp salt
1tsp pepper
200g canned tomato
1.5L water
4 tbsp olive oil

Method:
Heat the oil in a large pan and add the crushed garlic.
When translucent add the carrot, onion and celery
and heat for a few minutes. Next add the canned tomatoes.
Finally add the lentils, kamut and water and simmer for 10-20 min-
utes or until the vegetables and lentils are tender. Add the bouillon and spices to taste.
