Sprouted Lentils
Not only does sprouting increase the nutritional content of lentils but it alsoadds wonderful flavour and texture to soups and salads.
All you need is 1/2 a cup of brown lentils and 2 cups of water.
Place these together in a wide mouthed sprouting jar for about 8 hours. Cover the mouth of the jar with gauze or a mesh and drain the water, then add two fresh cups of water. Repeat this every morning and evening for 4-5 days until the lentils begin to sprout. It is best to use the sprouted lentils as soon
as possible but they can be stored for a couple of days in the fridge. The time it
takes for the lentils to sprout depends on the temperature
they are kept at and you may need to change the water more frequently at the height of summer.
