Alishan Cafe’s Recipe Book Translation p53: Cucumber and Nut Stir Fry
Here’s a perfect recipe if you’re staggering under a surplus of cucumbers this summer!
You will need:
- 3 cucumbers (cut into bite size pieces)
- 1/2 large tomato (cut into bite size pieces)
- 80g cashew nuts (roasted)
A:
- 5g garlic (crushed)
- 5g leek (finely diced)
- 5g ginger (finely diced)
B:
- 2 Tbsp canola oil
- 1/2 tsp salt
- 2 pinches pepper
- 1/2 tsp soy sauce
- 1/4 tsp cumin
- 1/2 tsp coriander powder
- 1 slice lemon
Method:
Slowly heat the garlic, leek and ginger in the canola oil until fragrant.
Add the cucumber and tomato and heat slowly. Once warmed through add the cashew nuts.
Add the remaining seasoning and mix well.
Serve with a slice of lemon.
