Vegetarian ‘Roe’ Salad

Amaranth seed rich in protein and essential amino acids. It’s sometimes referred to as a grain but it has no gluten and is therefore safe for anyone suffering from Coeliac Disease to eat. Amaranth seed is commonly used by adding a tablespoon or so to rice before cooking to increase the nutritional value, but it’s small size and slightly chewy texture make it a great replacement for fish roe. Here’s a recipe we like for a veggie style taramosalata.

<Ingredeints>
3 Tbsp Amaranth seed
150cc Water
Plum Vinegar (to taste)
Tofu Mayonnaise (to taste)
Touchi (to taste)
2-3 Steamed/Boiled Potatoes

<Method>
1. Gently wash the amaranth, then place in a pan, along with the water and simmer on a low heat for 15-20mins.
2. Once cooked mix the amaranth with the vinegar, mayonnaise and touchi to taste.
3. Mix in the potatoes and you’re done!
