Summer Mushroom Soup

Here is a delicious treat you can make very simply while camping! all you need is some cooking equipment and some water and a piece of corn or whatever other vegetable you can find!

This meal is ideal for summer, as corn is in season, and it can replace a lot of lost salt you get while hiking and camping in the hot summer sun!

Ingredients ( for serving 4-6 people – can use less for less people- 1 can of soup should be fine for 2 or 3 people):

    A cob of corn or 2 ( chosen as it is very easy to transport. Tough in your bag and soft in your mouth)
    Salt, pepper , seasoning or garlic paste.
    water
    a barbecue or fire.

Directions:

• First Roast your corn. you could have a simple gas burner like mine of a large barbecue, or even an open fire. Up to you. Roast it to suit your tastes. i added a bit of garlic paste to mine and slat and pepper, awesome.

•Toast your pita bread over fire or barbecue.

• Now heat your soup in a saucepan. Add some water as it is semi condensed, so you can make it as thick or watery to suit your taste. Of course if you are lucky enough to go camping in an area with fresh vegetables, you can make your soup from local vegetables. Dried soup is also an alternative if you are on a long hike and weight restrictions apply. We chose the easy and yummy option!

• Now we’re ready for action. get a small blade and cut the corn from the cob into a small bowl (or use the empty can- they are useful for many things)

• Break the fetta, put in a a bowl with the roasted corn kernels, fill the other side with mushroom soup. they will slowly mix over time but this make it all the more exciting. Break your toasted pita.

• Garnish with whatever you can find locally. One of he best things about camping is there are always nice flowers and herbs growing wildly. Make sure you know what you are eating though. Dried spices are also super light and easy to carry and really make a meal in to a gourmet feast. I chose a marigold because you can eat them too!
